What brought you to study at Teesside University?

I’m an international student, from China. I studied at Wuhan Polytechnic University, which has a close relationship with Teesside, and learned that I could come here. I chose this course because I am a foodie and interested in everything about food.

What’s the course like?

I’m enjoying it. My favourite module is Food Manufacturing and Processing. We create new food products in the food lab, and analyse their nutritional value. Then we design the factory that will make the product, and even work out the cost, and how many years it will take to make a profit. It’s just like a game, simulating running a company, which is very interesting and good fun.

I am also working as a research assistant on a project run by Dr Jibin He. The project aims to reduce the use of oil and the rate of its degradation in the manufacture of fried snacks, by investigating key processes and ingredient variables which impact upon oil quality and ultimately product quality.

And when you’re not studying?

I hit the gym, and at weekends I play basketball and swim with my friends. During the long holidays I have travelled all over the UK.

What do you plan to do after you graduate?

I hope to complete a master’s at an American university. My dream is to work for the UN Food and Agriculture Organisation.
