Graduate dreams of opening a Moroccan restaurant

A passionate graduate who worked in the catering team at Teesside University throughout his studies plans to become a restaurateur.

Anas Zegai, 26, from Morocco, recently graduated from the MSc Digital Marketing within Teesside University International Business School.

During his studies, he joined the kitchen team at on-campus catering outlet STREAT, preparing hand-stretched pizza and flatbreads, freshly grilled kebabs, street food specials and homemade desserts.

Now, he feels ready to take steps towards owning a restaurant.

“I’ve always dreamed of opening my own restaurant,” said Anas.

“I want to bring a modern twist to Mediterranean and Moroccan cuisine, sharing the flavours I grew up with in a way that’s fresh, creative and sustainable.”

He continued: “I started working at STREAT not long after moving to Teesside. I was looking for a part-time job to support myself during my studies, and I ended up joining the kitchen team.

“I had previous experience in hospitality, so it was a natural fit – and it turned out to be one of the best decisions I made.

Teesside University gave me the academic knowledge and practical tools to move forward confidently.

“STREAT is more than just a workplace. It’s the people, the vibrant atmosphere and, of course, the amazing food. The staff here are like a second family – we support each other, laugh together and grow together.

“It’s also where I met my girlfriend, which makes it even more special to me.”

Anas says the insight and experience gained through studying and working at Teesside University have prepared him to achieve his goals.

He added: “Teesside University gave me the academic knowledge and practical tools to move forward confidently.

“Through my course, I gained skills in digital strategy, branding, and market research – which I plan to use not only in promoting my own business but in building something that truly connects with people.

“Graduating feels like a huge milestone. I’m proud of what I’ve achieved and grateful to everyone who supported me along the way.”
